Chocolate Pie
Description
A rich, deeply chocolatey custard pie made from scratch — sugar, cocoa, flour, evaporated milk, vanilla, egg yolks, and butter heated in a saucepan until the butter melts and the filling comes together, then poured into an unbaked shell and baked until firm. Topped with whipped cream and served cold. A Southern chocolate pie the way it should be.

Preheat oven to 350°F.

In a saucepan, whisk together sugar, cocoa, and flour. Blend in evaporated milk and vanilla.

Beat egg yolks and stir into the mixture. Add butter.

Heat over medium heat, stirring constantly, just until butter is melted and filling is combined. Do not boil.

Pour filling into the unbaked pie shell.

Bake for 35–40 minutes until pie is firm in the center.

Cool completely, then refrigerate until cold.

Serve with whipped cream.

Note
Stir constantly while heating the filling to prevent scorching on the bottom of the pan. The filling only needs to heat until the butter melts — it finishes cooking in the oven.
