Description

A no-bake skillet cookie made by cooking butter, sugar, egg yolks, and dates together in a heavy skillet for about 10 minutes — stirring and mashing the dates as they cook — then mixing the warm mixture with Rice Krispies, chopped nuts, coconut, and vanilla, rolling into small balls, and coating in additional coconut. A retro Southern classic that holds its shape beautifully and keeps well in a tin.

  1. Combine butter, sugar, egg yolks, and dates in a heavy skillet over medium heat.
  2. Cook for about 10 minutes, stirring constantly and mashing the dates as they soften.
  3. Remove from heat. Transfer mixture to a large bowl.
  4. Mix in Rice Krispies, nuts, coconut, and vanilla.
  5. While still warm, roll mixture into small balls.
  6. Roll each ball in additional coconut to coat.
  7. Let cool completely on waxed paper.
  8. Store in an airtight tin.
