Description

A tender shortening-based cookie dough wrapped around a filling of pureed fig preserves, orange juice, chopped pecans, and mini chocolate chips — sealed, baked until lightly golden, and finished with a simple powdered sugar glaze. A sophisticated, slightly old-fashioned cookie that surprises everyone who tries one.

Instructions

  1. Mix all dough ingredients together and chill for 1 hour.
  2. For filling: put fig preserves in a food processor and purée. Stir in orange juice, pecans, and chocolate chips.
  3. Preheat oven to 400°F.
  4. Roll cookie dough on a floured surface to about 1/16-inch thickness. Cut into circles.
  5. Place about 1 tsp. of fig filling on top of one dough circle. Cover with a second circle. Seal edges by pressing closed with the tines of a fork.
  6. Pierce the top of each cookie with a fork to release steam during baking.
  7. Bake at 400°F for 6 minutes until lightly browned. Remove from oven and cool on a wire rack.
  8. Mix confectioner’s sugar and milk together for the glaze. Spoon over cooled cookies. Garnish with nonpareils if desired.
