Description

A legendary three-layer Southern cake with coconut and pecans folded into a tender buttermilk batter, and frosted generously with a cream cheese and powdered sugar frosting finished with more coconut and pecans. Rich, elegant, and the kind of cake people request by name for every birthday and holiday.

Instructions

  1. Preheat oven to 350°F. Grease and flour three 8-inch round cake pans.
  2. Cream butter and shortening together. Add sugar and beat until smooth. Add egg yolks and beat well.
  3. Combine flour and baking soda. Add to the creamed mixture alternately with buttermilk.
  4. Stir in vanilla, coconut, and pecans.
  5. Fold in stiffly beaten egg whites.
  6. Pour into prepared pans. Bake 25–30 minutes until a toothpick comes out clean. Cool completely.
  7. For frosting: beat cream cheese and butter until smooth. Add powdered sugar and vanilla. Spread on cooled cake.
  8. Garnish the top with coconut flakes and chopped pecans.

Note
