Description

A hearty slow cooker chicken stew built with chicken breasts, onion, bell pepper, jalapeños, green chilies, diced tomatoes, tomato sauce, garlic, cumin, chili powder, and oregano — cooked low and slow until the chicken shreds right into the sauce. Top with cilantro and avocado and serve straight from the pot. Clean eating comfort food at its best.

Instructions

  1. Place chicken breasts in the bottom of a slow cooker.
  2. Add all remaining ingredients on top of the chicken in any order.
  3. Cook on LOW for 8–10 hours or HIGH for 6–8 hours.
  4. When done, use tongs to shred the chicken directly into the stew, pulling it apart and mixing it with all the ingredients.
  5. Top individual bowls with fresh cilantro and sliced avocado before serving.
