Description
A classic Cajun cornmeal breakfast — cornmeal moistened with water, pan-fried in corn oil until crispy on the outside and soft within, then served in a deep bowl with cold milk. Simple, inexpensive, and deeply traditional. A staple of Cajun breakfast tables and a favorite supper in homes along the bayou.

Add salt to the corn meal and moisten with water. Mix until just combined.

Heat the corn oil in a deep saucepan over medium heat.

Put the corn meal mixture in the hot pan and stir constantly with a large spoon until thoroughly heated.

Eliminate any lumps by mashing with the spoon while stirring.

Cover the pan, lower the heat, and let steam for 4–5 minutes.

Serve in a deep bowl with cold milk.

Note
Too much water will make the dish lumpy. Use just enough to moisten the cornmeal.
