French Bread (Gluten-Free)
Description
A gluten-free French bread built on rice flour, tapioca flour, and xanthan gum with yeast-risen dough. No kneading, no shaping struggle — spoon onto parchment and bake to a deep golden brown.

1. Whisk egg whites until frothy.

2. In a stand mixer bowl, mix rice flour, tapioca flour, xanthan gum, and salt together.

3. In a small bowl, dissolve sugar and yeast in the warm water. Allow yeast to activate until foamy, about 5–10 minutes.

4. Blend yeast mixture into the dry ingredients along with melted butter and vinegar. Beat on high for 1–2 minutes.

5. Fold in whipped egg whites until fully integrated.

6. Line a cookie sheet with parchment paper. Grease parchment and dust with cornmeal.

7. Spoon dough onto the parchment — the dough will be goopy, this is normal.

8. Cover and let rise for 20–25 minutes.

9. Preheat oven to 400°F. Bake for 45 minutes until deep golden brown.

10. Transfer to a cooling rack and cool for 20–30 minutes before slicing.

Note
Do not add extra flour to firm up the dough — the goopy texture is correct and produces the right crumb after baking.
