Cut broccoli into florets of similar size and rinse well in colander. Heat olive oil in pan over medium heat. Cook for one minute. Add broccoli and stir for 2 minutes. Add orange juice and salt. Cover pot and cook about five minutes, or until the broccoli is tender but still has a little crunch. Stir once during the cooking time.

Remove the broccoli with a slotted spoon to a bowl. Boil down any cooking juices left in the pan until slightly thickened. Pour juices that have gathered around the broccoli into the pan and reduce to about three Tbsp.; stir in vinegar.

If serving warm, pour the cooking juices over the broccoli and serve. If serving cold, refrigerate the broccoli and cooking juices separately (Broccoli will discolor if not kept separate). Combine the two just before serving.
